AGRONOMIC PRACTICES: Biodynamics
GRAPE VARIETIES: 100% Foglia Tonda. Ancient grape recently rediscovered, with large rounded leaves, from which the name derives. Grape of an intense violet colour that in the wine assume bluish reflections. Probably selected in the Medici era.
PLANT DENSITY: approx. 5000 plants per hectare on average
HARVEST: By hand in special baskets. The harvest is decided on the basis of sensory tests.
YEASTS: Indigenous
VINIFICATION: the three grapes are vinified togheder at the same time. Maceration for ≈ 48 hours, punching manual and replacements to air every 6 hours for about 20 days. After running off "batonage sur lies" (thin scum) ≈6 months.
AGEING: in French oak barriques of 2 °-3 °, then in steel until bottling.
SENSORY PROFILE: Intense and deep colour with particular bluish reflections. Scents of red fruits, minerals and spicy that are also found on the palate. Wine of excellent structure, fresh with soft tannins but well present.
PAIRINGS: Important first courses. Cured meats, roasted or stewed meats, also matched with game

All our grapes, produced by biodynamic method, have been harvested manually, vinified with indigenous yeasts and no physico-chemical treatment in order to obtain a more natural possible wine.
